Yes. I have difficulties remembering to post here with any regularity. I'm working on it.
Here's a bowl of kale chips. That's right. It seems that someone found out if you tear up a kale, put it on a cookie sheet, douse it with a little olive oil, salt and pepper, you can put it in the oven at 325 for 20 - 30 minutes and instead of getting soggy, it gets crisp. Interesting. In my opinion, you cannot save leftovers.
Dinner then was kale chips, grape tomatoes, grilled chicken breast, and pasta salad made with Smart Taste pasta, cucumbers, cranberries, celery and Vidalia onion and peppercorn dressing.
Kale that didn't get made into chips was steamed, topped with sliced beets, and served with pork chops topped with a quick blueberry jam and couscous.
Everyone who lives near me knows it's been too hot to really cook. But today we're getting a break with highs only around 80. Maybe I'll figure out something good.
